Cooking and Preparation Tools

This is a list of the items required to prepare and cook the taco ingredients.

♦  Large frying pan to sear, roast                     ♦  Tongs (2)                                                                            and deep fry tortillas

♦  Medium pot (10 qt) to simmer roast            ♦  Knife for chopping

♦  Sauce pan to hold shredded meat                 ♦  Large chopping board

♦  Baking pan for fried shells                            ♦  Fork for shredding beef

♦  Bowls for garnishes                                       ♦  Toothpicks

♦  Paper towels

Let’s review the list of tools together.

The large frying pan should be large enough to have the roast lay completely flat. You could sear the roast in a large pot if you don’t have a large enough frying pan or cut the roast into more manageable pieces .

The 10 qt pot should be able to hold the roast, celery, and onion with water covering the top of the roast.

Baking pan should be large enough to hold the taco shells after they have been fried.

The tongs will be used to turn over the roast when searing it. Two tongs will probably be necessary to move the roast from the frying pan to the pot.

Bowls, knife, chopping board, paper towels, fork and toothpicks are self explanatory.

Now, let’s review the list of ingredients.

Beef Chuck 7-bone Roast, 4-5 lbs, is a inexpensive cut of meat.  A more of expensive cut is not necessary. The cooking technique will make the meat from the roast turn out tender.

roast

Cooking oil, canola or vegetable, will be used to sear the roast and fry the taco shells. Do not use olive oil. Olive oil should not be heated to higher temperatures that is why canola or vegetable oil is used.

Seasoning – pepper, salt or seasoning salt, and garlic powder  are used to season the roast before frying. The garlic power and cumin are used to season the shredded meat and broth.

28 oz can of Whole Tomato (with or without skin). Sometimes it is hard to find a can of whole tomatoes with the skin. It depends on the grocery store. Either will be fine.

Celery and yellow onion are used with the shredded meat and broth.

You have a choice of flour or corn tortillas or both. Preparation of both types will be demonstrated.

Salsa, head of lettuce, green onions, tomatoes, and shredded cheese make up the basic garnishes.

Optional garnishes are sour cream, Serrano or Jalapeno peppers and cilantro. Jalapeno peppers tend to be milder than Serrano peppers. Be sure to keep cilantro as a separate garnish. Some people think cilantro tastes like soap or dirt.
